RECIPE OF THE WEEK

Beet Caviar

  • 3-4 Medium Beets Peeled & Quartered
  • 1 Tbsp. Olive Oil
  • ½ Tsp Salt and Pepper
  • 5 Pitted Prunes, chopped
  • 1/3 Cup Unsalted Walnuts, chopped
  • 1/3 Cup Yogurt

 

Oven 375 degrees. Drizzle beets & oil .

Bake in single layer 45-60 minutes (tender)

In food processor blend all except yogurt, to caviar texture.

Fold in Yogurt

Serve immediately.
