“Recipe of The Week: Mango Black Bean Salsa

The colours in this salsa speak summer! It is a delicious accompaniment to grilled fish or chicken. It’s also delicious with crackers or tortilla chips.

Ingredients

2 small mangos or 1 large, chopped small

½ cup black beans, rinsed

1 medium tomato, chopped small

1/3 cup cilantro chopped (optional)

2 green onions, chopped

½ tsp jalapeno pepper (or other hot pepper), minced

1 small garlic clove, minced

Juice of one lime

Salt and pepper

Mix all ingredients together in a bowl and serve immediately, or refrigerate.
